Red Onion and Chorizo One Pot Orzo Pasta

Ingredients

  • 1 red onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 1 fresh chilli, deseeded and finely chopped
  • 200 g chorizo, roughly chopped
  • 600g chopped tomatoes
  • 400 g orzo
  • 800ml vegetable stock
  • Grated parmesan, to serve
  • 1 tbsp olive oil

Method

  1. Heat the oil in a large frying pan over a medium heat. Add the onion and fry until softened. Then add the garlic and chilli and cook for 1 minute until soft.
  2. Add the chopped chorizo and fry for 2-3 minutes.
  3. Add the tomatoes and stir. Then add the orzo and stock.
  4. Simmer for 10 minutes or until the liquid has reduced and the orzo is tender. Add a tablespoon of water if the orzo begins to dry out.
  5. Serve with a grating of parmesan.
