Strawberry Ice Cream Cookie Sandwiches


For the strawberry ice cream:

  • 500g strawberries
  • 200g yogurt
  • 2 tbsp honey

For the cookies:

  • 100g soft, unsalted butter
  • 100g plain flour
  • 100g almonds
  • 150g sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 8g bicarbonate of soda
  • 1 pinch of salt


  1. Wash and cut the strawberries into pieces and freeze them for at least 6 hours.
  2. Prepare the cookies by making the almond flour first. Add the almond in the blender jug. Select speed 8 and press start. After about 30 seconds the almond flour is ready.
  3. Mix the almond flour with the plain flour, bicarbonate of soda, pinch of salt.
  4. In another bowl whisk together butter, sugar, vanilla extract and egg. Mix with the flour.
  5. Once the dough is smooth, use an ice cream scoop to create the cookies. Bake at 190° C for 10 minutes. Once cooked, let the cookies cool on a tray.
  6. In the blender jug, add the frozen strawberries, yoghurt and honey. Use the frozen dessert mode and press start. Once finished, transfer the ice cream in a can and keep it in the freezer until ready to use.
  7. Assemble the sandwiches and serve immediately
