Turkey, stuffing and cranberry pastry puffs

Ingredients

  • 350g turkey thigh mince
  • 200g sage and onion stuffing, pre-made
  • 3 tbsp dried cranberries, chopped
  • 500 puff pastry
  • 1tbsp wholegrain mustard
  • 1tbsp cranberry sauce
  • 1 egg, beaten
  • 1tbsp nigella seeds

Method

  1. Pre-heat the oven to 180°C fan assist.
  2. Add the turkey, stuffing, cranberries, mustard and cranberry sauce into a large bowl and mix to combine.
  3. Roll out the pastry into two rectangles. Generously spoon the mixture onto the right of the longest side of each rectangle. Fold the pastry over so that the edge meets the other edge.
  4. Use a fork to crimp the meeting edge together. Brush with the beaten egg and sprinkle the nigella seeds on top.
  5. Use a knife to score the top of the pastry 10 times. This will make it easy to slice into portions once cooked.
  6. Place onto the lowest shelf position on a metal tray and cook for 15-20 minutes, until golden brown and cooked through to the bottom.
