Ginger and Marmalade Pork Belly Bites

Ingredients

  • 1kg pork belly, skinless and excess fat trimmed

  • 150g marmalade

  • 1 tsp dried chilli flakes

  • 1 tsp ginger, peeled and chopped

  • 1 tsp garlic, peeled and chopped

  • 2 tbsp soy sauce

  • 1 orange, juiced

Method

  1. This step can be done ahead of time. Pre-heat your oven to 150°C Fan. Place the pork belly into a roasting tray, cover tightly with foil and roast for 2 hours 30 minutes. Cool to room temperature and cut into bite-sized pieces.
  2. Heat the oven to fan 180°C. Place the squares of pork belly into a roasting tray and cook for half an hour, whilst turning regularly.
  3. Add the marmalade, chilli flakes, garlic, ginger, soy sauce and orange juice in a pan and reduce until it reaches a syrup-like consistency.
  4. Pour the syrup over the pork belly, gently toss and roast for another 5 minutes until the pieces are glazed and sticky. Pierce with cocktail sticks to serve.
