Ingredients
Cake:
- 250g plain flour
- 300g caster sugar
- ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp table salt
- 315ml olive oil
- 225ml whole milk
- 3 eggs
- 115ml fresh-squeezed orange juice
- 60ml Cointreau
- 1 tbsp orange zest
Icing:
- 300g icing sugar
- 60ml orange juice
- ½ tsp Cointreau
- 2 tbsps orange zest
Method
- Preheat the oven to 170C. Firstly add the dry ingredients to a bowl, or stand mixer. Combine thoroughly. Then add in the remaining ingredients.
- Pour the batter into a lightly greased 26cm frying pan, and bake for about 35 minutes.
- Alternatively, pour half the mix into a 24cm frying pan, and bake for 25 minutes. The other half can be baked in a pattie tin, for mini cakes, for 20 minutes.
Orange Glaze
Add all of the ingredients into a mixing bowl and beat on high until smooth. Add more orange juice or powdered sugar to the perfect glaze consistency. Let the cake cool a bit, then pour the glaze over the cake/cakes.
