Orange Olive Oil Skillet Cake



  • 250g plain flour
  • 300g caster sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp table salt
  • 315ml olive oil
  • 225ml whole milk
  • 3 eggs
  • 115ml fresh-squeezed orange juice
  • 60ml Cointreau
  • 1 tbsp orange zest


  • 300g icing sugar
  • 60ml orange juice
  • ½ tsp Cointreau
  • 2 tbsps orange zest


  1. Preheat the oven to 170C. Firstly add the dry ingredients to a bowl, or stand mixer.  Combine thoroughly.  Then add in the remaining ingredients.
  2. Pour the batter into a lightly greased 26cm frying pan, and bake for about 35 minutes.
  3. Alternatively, pour half the mix into a 24cm frying pan, and bake for 25 minutes.  The other half can be baked in a pattie tin, for mini cakes, for 20 minutes.

Orange Glaze

Add all of the ingredients into a mixing bowl and beat on high until smooth. Add more orange juice or powdered sugar to the perfect glaze consistency. Let the cake cool a bit, then pour the glaze over the cake/cakes.
