Potato rosti


  • 3 large Desiree potatoes, peeled
  • 2 tbsp olive oil
  • Salt and pepper


  1. Grate the potatoes on a large box grater, season with salt and pepper 
  2. In a hot large non-stick frying pan, add the olive oil. Then carefully add the grated potatoes, push down in the pan, so the potatoes take the shape of the base of the pan.
  3. Cook gently for 5 mins then toss the rosti to the other side cook for a further 5 mins. Serve immediately.
