Salvia Cocktail

Ingredients

  • 50ml gin (preferably a botanical gin)
  • 20ml freshly squeezed lemon juice
  • 15ml honey syrup (1:1 honey and hot water, mixed until smooth)
  • 2–3 fresh sage leaves, plus extra for garnish
  • Sparkling water (from your Smeg Soda Maker)
  • Ice

Method

  1. In a cocktail shaker, gently muddle 2–3 sage leaves with the honey syrup to release their oils.
  2. Add gin, lemon juice, and a handful of ice. Shake well until chilled.
  3. Fill a highball or stemless wine glass with ice. Using your Smeg Soda Maker, carbonate fresh cold water and top the glass about halfway with sparkling water.
  4. Double strain the shaken mixture into the glass over the fizzy water to preserve the bubbles.
  5. Give it a gentle stir, then garnish with a sprig of sage or a lemon twist for a fragrant finish.
