1. Fit your Smeg stand mixer with the whisk attachment. Add the feta, Greek yoghurt, garlic, herbs and smoked paprika to the bowl. Whisk on a medium speed for 2–3 minutes until smooth, light and airy.
2. If needed, add a little more yoghurt to loosen the mixture until it becomes soft and silky. Scrape down the sides to ensure everything is fully incorporated.
3. Gently heat the olive oil in a small pan or on a low heat on the hob. Stir in a pinch of smoked paprika or chilli flakes to infuse flavour.
4. Spoon the whipped feta onto a serving plate and create soft swirls with the back of a spoon.
Drizzle over the warm infused oil and finish with extra herbs.
