Bakewell Tart

A classic dessert. Enjoy our Bakewell tart recipe, with its sweet almond filling and raspberry jam.
Perfect for afternoon tea or any special occasion.

Ingredients

  • Shortcrust pastry case, pre-baked
  • 100g salted butter, softened
  • 100g caster sugar
  • 50g ground almonds
  • 1 tsp almond extract
  • 2 eggs, beaten
  • 3 tbsp raspberry jam
  • 50g flaked almonds

Method

1. Preheat the oven to 180 degrees using the Circulaire function
2. Using the Smeg Electric Hand Mixer, beat the butter and sugar until combined.
3. Add the ground almonds, almond extract and eggs and beat for a further minute.
4. Spread the raspberry jam over the pastry, then top with the almond filling.
5. Scatter over the flaked almonds.
6. Bake for 25 minutes until golden and firm.
7. Leave to cool in the tin.
8. Once cooled, mix together icing sugar and 1-2 tsp water and drizzle over the tart.

• Play with the Jam layer – instead of the classic raspberry or strawberry jam try using apricot, cherry or even orange marmalade for a new flavour!
• Experiment– add extracts such as vanilla or almond, liqueurs like Amaretto or spices like cinnamon to the filling for a unique taste.
• Add chocolate – add melted dark chocolate or white chocolate.
• Add additional toppings – such as crushed nuts like pistachios or hazelnuts for the added flavour and crunch.
