Caramelised Mushroom Tartlets

Ingredients

  • 2 tbsp olive oil
  • 1 onion chopped
  • 1 tbsp golden caster sugar
  • 250g chestnut mushrooms, chopped
  • 1 garlic clove
  • 3-4 tbsp thyme leaves
  • Butter, for spreading
  • 12 slices of thin sliced white sandwich bread
  • 100g grated mature cheddar cheese

Method

  1. Begin by preheating the oven to 200°C fan. Heat the oil in a large frying pan, add the onion and dry until soft and golden. Stir in the sugar and seasoning then add the mushrooms. Sizzle until the mushrooms are golden. Stir in the garlic for a few minutes. Leave to cool.
  2. Make the tartlet bases, cut 7-8cm circles out of the bread using a cookie cutter or glass. Butter one side and stick the buttered side of the bread down into a 12-hole tartlet tin.
  3. Divide the mushroom mixture between the tartlets and top with a sprinkle of cheese and thyme. Bake for 10-15 minutes until golden and bubbling.
