Grilled pineapple with crumble and salted caramel

Grilled pineapple topped with crunchy crumble and warm salted caramel. Sweet, soft and slightly smoky, it’s a simple dessert with rich flavour and texture.

Pineapple, 4 slices 120 g each
10 g Powdered sugar
30 g Almond flour
30 g Flour
30 g Butter
30 g Sugar

Sprinkle powdered sugar over the pineapple and let it rest in the refrigerator for 20 minutes.

Mix all the other ingredients together and make a fairly compact mixture.

Crumble it on the bbq plate from the smooth side and bake it at 160° for 15 minutes, first level from the bottom.

Separately, prepare the salted caramel: in a saucepan, bring the sugar to caramelize to a temperature of about 160°, pour in the water and then the cream.

Cook on a low flame for about 10 minutes while keeping stirred.

Bring the bbq griddle to temperature , cook the pineapple at a temperature of 250° for 2 minutes per side.

Lay the pineapple on a plate, pour in the salted caramel and sprinkle with the crumble.
