Elevated Home Cooking: Donal Skehan's Neptune Kitchen

Upon renovating his kitchen, Irish TV personality and presenter Donal Skehan selected Smeg's luxury kitchen appliances to complement the timeless elegance of his new Neptune kitchen.

Irish food author and TV cook, Donal Skehan, recently brought his first family home—a charming 1930s cottage nestled in his hometown of Howth. One of his top priorities was a brand-new kitchen that offered the perfect blend of practicality for his family's daily needs and an aesthetically pleasing backdrop in which to film and photograph his delicious recipes at home. To create his perfect kitchen, Donal enlisted the expertise of Neptune to provide exquisite cabinetry and selected several Smeg appliances to seamlessly blend style and functionality.

Above the cooker, a powerful extractor hood has been fitted to efficiently remove odours and steam, creating a more comfortable and clean cooking environment.

Home Kitchen: Donal's Latest Cookbook

Known for promoting accessible and delicious home cooking, Donal has authored 11 cookbooks. His latest ' Home Kitchen,' is designed to inspire readers to become more confident and creative in the kitchen, and is packed with delicious recipes.

Donal's Minestrone recipe

Serves: 4
Time: 45 mins

Ingredients:

2 tbsp olive oil
2 carrots, finely chopped
1 courgette, finely chopped
1 small onion, finely chopped
2 garlic cloves, finely sliced
1 x 400g tin chopped tomatoes
1 litre chicken stock
2 tsp red wine vinegar
150g orzo pasta
Parmesan, to serve
Sea salt & freshly ground black pepper

For the basil oil:
50g basil leaves, plus a few extra, to serve
3-5 tbsp extra virgin olive oil, plus a drizzle more to serve

For the garlic bread:
Sourdough bread loaf
375g butter, softened
3 garlic clove, grated
Small handful of basil leaves, finely chopped

Method

  1. First, make the basil oil. Bring a saucepan of water to the boil, then blanch the basil leaves for a few seconds before transferring to a bowl of iced water. Gently squeeze out the water, then whizz in a jug blender with the extra virgin olive oil. Leave to stand for 10 minutes before straining the oil through a fine sieve and setting aside for serving.
  2. To make the soup, heat the olive oil in a sauté pan over a low heat and gently fry the onion, garlic, carrot and courgette for 10–15 minutes until softened. Season with salt & pepper and add in the tinned tomatoes, chicken stock, red wine vinegar and bring to the boil, before allowing to simmer for 10 minutes.
  3. Add the pasta and cook for 8 minutes until the pasta is just cooked. If you’re making this ahead, wait to add the pasta until you’re ready to eat.
  4. While the soup is simmering, prepare the garlic bread. Preheat the oven to 180ºC/ 160ºC fan/350ºF/Gas Mark 4. In a bowl, mix the butter with the garlic, finely chopped basil and some seasoning. Slice the sourdough loaf without slicing all the way through and generously spread the garlic butter between each slice. Wrap with foil and bake in the oven for 15-20 minutes.
  5. Whilst the bread is still warm, slice all the way through and serve with the pasta soup, a drizzle of the basil oil, some basil leaves and shavings of Parmesan.
