6 Ingredient Lemon Shortbread Ice Cream

Using the Smeg Stand Mixer & Ice Cream Maker Attatchment

Creamy, zesty and packed with buttery shortbread, this Lemon Shortbread Ice Cream is made using the Smeg stand mixer and Ice Cream Maker attachment. Swirls of lemon curd and crunchy shortbread pieces create a refreshing dessert that's perfect for warm days.

Ingredients

  •  600ml whole milk
  • 250ml cream
  • 150g sugar
  • 100ml lemon juice
  • 5 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp lemon curd
  • Shortbread pieces
  • Extra shortbread pieces, to serve

Method

  1. Using the whisk attachment on your Smeg stand mixer, mix together the milk, cream, sugar, lemon juice, egg yolks and vanilla until combined.
  2. Chill the mixture in the fridge until cold.
  3. Pour into the Smeg Ice Cream Maker attachment and churn according to the manufacturer's instructions until thick and creamy.
  4. Stir through the lemon curd and shortbread pieces.
  5. Transfer to a freezer-safe container and freeze until firm.
  6. Top with extra shortbread pieces before serving.
