Mince Pies

Follow our recipe to make delicous mince pies—perfect for sharing with friends and family and spreading holiday cheer this Christmas!

Ingredients

  • Shortcrust pastry, pre-rolled
  • 500g mincemeat
  • 1 cooking apple, finely chopped
  • 1 lemon, zested and juiced
  • 1 egg, beaten
  • Demerara sugar

Method

  1. Preheat the oven to 200°C.
  2. Prepare the mincemeat filling by adding the mincemeat into a bowl with 1 finely chopped apple and the zest and juice of a lemon.
  3. To prepare the pastry, start by laying out the puff pastry sheet. Using a round cutter (around 8 cm), cut out 12 circles. Place the pastry circles into all 12 holes of a muffin tin.
  4.  Fill each pastry case with 1 tsp of the prepared mincemeat.
  5. Using a small star cutter, cut 12 pastry tops with the remaining pastry and place on the top of each mince pie.
  6. Using a pastry brush, glaze each mince pie top, then sprinkle demerara sugar on top.
  7. Bake for 12 minutes until golden brown. Allow to cool before serving.
