Mustard and Maple glazed Sausage Blinis

Ingredients

  • 6 sausages, sliced into 4
  • 1 tbsp wholegrain mustard
  • ​2 tbsp maple syrup, plus extra to serve
  • 24 blinis (bought or homemade)
  • chives, finely chopped

Method

  1. Pre-heat the oven to Circulaire at 180°C. Place the sliced sausages into a baking tray, drizzle with olive oil and roast for 15 minutes, until golden. Next, combine the mustard and maple syrup and pour over the sausages. Ensure they are evenly coated and cook for 5-10 minutes longer or until caramelised
  2. Meanwhile, gently heat the blinis in the oven.
  3. Put one sausage half onto a blini and drizzle over any remaining maple glaze. Finally, sprinkle with chives and serve.

Ingredients (gluten-free)

  • 6 gluten-free sausages, sliced into 4 pieces
  • 1 tbsp wholegrain mustard
  • 2 tbsp maple syrup, plus extra to serve
  • 24 gluten-free blinis (bought or homemade):
  • 75ml milk
  • 100g Greek yogurt
  • 1 medium egg
  • 1 pinch bicarbonate of soda
  • 100g gluten-free self-raising Flour
  • chives, finely chopped

Method (gluten-free)

  1. Pre-heat the oven to Circulaire at 180°C. Place the sliced sausages into a baking tray, drizzle with olive oil and roast for 15 minutes, until golden. Next, combine the mustard and maple syrup and pour over the sausages. Ensure they are evenly coated and cook for 5-10 minutes longer or until caramelised.
  2. Meanwhile, cook the blinis. Combine the milk, Greek yoghurt, egg, bicarbonate of soda and the flour and whisk until smooth. Heat a large pan over a medium heat and add some oil. Using two teaspoons, dollop the mixture into the pan in 50p sizes. Alternatively, transfer the batter into a squeezy bottle. Once beginning to bubble, flip and cook on the other side.
  3. Put one sausage half onto a blini and drizzle over any remaining maple glaze. Finally, sprinkle with chives and serve.
