Preheat the oven with the Air Fry inside. Wash the potatoes without peeling them, then cook them in boiling salted water for 15-20 minutes. Once cooked, leave them to cool slightly before removing the skins. Beat the egg yolks in a bowl along with salt, pepper, nutmeg and grated cheese. Use a tablespoon to shape portions of the mixture (approx. 35 g) into cylinders and dip them first in the beaten egg and then in the breadcrumbs. Lightly drizzle with oil and place the croquettes in the freezer for 30 minutes. After that, position them on the Air Fry and place them in the oven.
