Separate the egg whites from the yolks, and beat the egg whites firmly at the maximum speed of the hand mixer, using the wire whisks. In another bowl, mix the egg yolks with the milk and extra virgin olive oil. Add the grated cheese and mix again. In the same bowl, add the flour and baking powder and mix everything using the hand mixer on speed 1.
Incorporate the whipped egg whites with a spatula, taking care not to dismantle the mixture.
