On a cutting board, finely chop the rosemary with lemon zest and garlic. Transfer to a bowl and mix together with the salt and pepper. Massage the piece of meat with the flavoured salt and very little EVO oil. Leave to marinate for about ten minutes on the pan or overnight, wrapped in plastic wrap.
