Tarte Tatin with vanilla ice cream

Step 1

Cut apples into slices and pour 120 g sugar with water into a saucepan and caramelise reaching a temperature of 170°, stir in the 20 g butter.

Step 2

Pour the mixture into a cake pan and lay the apples on top and sprinkle with the remaining 20 g sugar and the 20 g butter.

Step 3

Roll out the brisé dough 5 mm thick and cover the apples making sure to wrap around the edges. Bake at 200° traditional fan assisted mode for 30 minutes.

Step 4

Once ready, invert the tarte tatin onto a serving dish and accompany with ice cream.
